SYLVIA'S Famous
SCONES

​

4 cups flour

1 tablespoon baking powder

1.5 teaspoon baking soda

1 teaspoon salt

 

1/4 cup sugar

1/2 cup grated frozen stick of butter

 

1 cup raisins

2 cups buttermilk

Heat oven to 500ºF. 

​

Sieve first set of ingredients into large bowl. Mix in 2nd and then 3rd set of ingredients.

 

Place on board, knead until smooth but handle as little as possible.

 

Next, roll to 3/4" thick and grid cut into 3" squares. Lightly flour a cookie sheet and place each scone at least 2 inches apart. Brush with egg whites to give shine.

 

Place in oven. After 10 minutes lower to 400ºF and nudge each scone a bit. Bake for 10 more minutes.

 

They freeze well, but are best enjoyed warm!

SYLVIA'S Famous
Buttermilk Pancakes

 

2 eggs

1 1/4 cups buttermilk

​

1 cup flour

1/2 teaspoon baking soda

1/2 teaspoon salt

​
 

Mix eggs, mil and oil together in large bowl. Sieve flour, baking soda and salt into the same bowl. Mix gently and ONLY the flour is covered.  Do not over mix. The lumpy look is ideal.

 

Heat griddle on medium heat until a flick of water sizzled on top. Then add oil to griddle and slowly pour pancakes.  When bubbles are covering the middle and the edges are done, flip the pancakes over to complete cooking.

 

Wrap cooked pancakes in cotton towel until ready to eat. Serve with maple syrup on warmed plates!

Soda Bread

 

2 1/2 cups self rising flour

1/2 cup raisins

1 1/2 tablespoons sugar

1/2 teaspoon baking soda (smash and add to buttermilk)

1 cup buttermilk
 

 

Heat oven to 400ºF

 

Mix 1st set of ingredients; separately mix 2nd set of ingredients. Then mix together both sets.  Place on board and knead together. Pat into a circle. Cut a cross in the top with a floured knife.  Place on baking sheet. Bake for 45 minutes. Cool on rack. Enjoy with butter!
